Vegan Boobie Bikkie recipe15 Feb 2018
Flax seeds, oats, and brewer’s yeast are just some of the ingredients thought to help boost milk supply, and of course they are good for you and tasty in a cookie. Elle Oshan, our foraging new mum has got it all covered for you here.
Prep time: approx. 15 minutes
Oven temp: preheat to 180C
Makes approx. 14 cookies, using a dessert spoon per cookie
1 cup self raising wholemeal flour
1/2 cup coconut oil
3/4 cup rice syrup
2 tablespoons flaxseed meal
2 tablespoons of water
1 tablespoon vanilla extract
1 teaspoon cinnamon
1-2 tablespoons of brewers yeast (don’t substitute with other types of yeast or leave this out)
1/2 teaspoon salt
1 1/2 cups oats
1/2 cup of dried fruit and nuts
You can also add ½ cup of mashed banana or nut/seed butter, or vegan chocolate chips

In a large mixing bowl, mix the oil and syrup and vanilla. Mix well. In a separate bowl, combine the flaxseed and water, let them sit for a few minutes before adding to mix. Add the dry ingredients and mix well. Spoon mixture onto a lightly greased or lined baking tray and flatten. Bake for around 10-12 minutes, depending on how chewy or crunchy you like bikkies.
